  1. Como vamos a picar una buena cantidad entre patatas y verdura, nos hacemos con un bol grande donde iremos echando todo muy picadito: patatas, cebolla, los ajos enteros partidos en 2, pimientos y el chorizo. Cuando esté todo ponemos sal.
  2. Ponemos una sartén bien grande al fuego, yo suelo usar una paellera pero también puede hacerse en una cacerola, lo importante es que sea un recipiente amplio. Ponemos aceite de girasol y echamos todo lo que hemos picado, el aceite prácticamente debe cubrir.
  3. Se deja a fuego medio y tapado pero sin perderlo de vista ya que debemos moverlo de cuando en cuando.
    Batimos los huevos y ponemos un poco de sal y si hemos decidido poner levadura este es el momento, no es imprescindible pero le dará más esponjosidad a la tortilla.
  4. Sacamos las patatas con todo lo demás, retiramos los ajos y lo pasamos a un escurridor porque no queremos que lleve nada de aceite o grasa de la que haya podido soltar el chorizo. Cuando esté bien escurrido lo mezclamos con los huevos. Ponemos una sartén al fuego, la que hemos usado es de 22 cm porque queremos una tortilla gruesa, ponemos un chorrito de aove y volcamos el preparado. Bajamos el fuego a 5 de 9 y tapamos.
  5. Estará un buen rato, hasta que veamos que se mueve bien la base, subimos el fuego para dorar ese lado y cuando esté 1/2 minuto le damos la vuelta. Y de nuevo bajamos el fuego y tapamos.
    Cuando lleve un buen rato volvemos a subir el fuego para dorar. Podemos comprobar si se ha cocinado bien por dentro, se puede notar tocando o metiendo un palillo. Y ya tienes listo este tortillón que será la delicia de tu familia o amigos.
