Vamos a darle un toque distinto al salmorejo, para ello vamos a agregarle mango, que le va a dar un sabor distinto pero sin llegar a perder la esencia del típico salmorejo cordobés. Reconozco que era un poquito reacia a las variantes del salmorejo típico, pero mereció la pena, está muy rico.

  1. 600 g tomates tipo pera
  2. 150 g pan del día anterior
  3. 1 mango maduro
  4. 2-3 dientes ajo
  5. 100 ml aceite de oliva
  6. 2-3 cucharaditas sal

  8. 1 huevo cocido
  9. 100 g taquitos de jamón

  1. Empezamos agrupando todos los ingredientes. Escaldamos los tomates para que nos sea más fácil quitarles la piel, para ello hacemos una cruz en los extremos del tomate, los ponemos en una cazuela con agua y cuando rompa a hervir contamos 1 minuto, o hasta que veáis que la piel se desprende. Sacamos los tomates del agua y los enfriamos con un chorrito de agua fría.
  2. Mientras se escaldan y enfrían los tomates, vamos a trocear el pan y lo echamos en un bol amplio. Pelamos y troceamos en cubos el mango y agregamos al pan. Pelamos, retiramos el germen y laminamos los ajos, los echamos al bol.
  3. Pelamos y troceamos los tomates y los agregamos al bol. Echamos la sal intentando cubrir la superficie, pero no agregueis más de 3 cucharaditas. Tapamos con un paño limpio de cocina y dejamos reposar 30-40 minutos.
  4. Transcurrido el tiempo de reposo, trituramos todo bien con ayuda de la batidora. Agregamos el aceite y volvemos a triturar hasta que todo esté bien integrado, probamos por si hay que rectificar y añadir un poquito más de sal.
  5. Vertemos nuestro salmorejo en los recipientes que más nos gusten y los llevamos a la nevera. Dejamos enfriar un mínimo de 3 horas antes de consumir.
  6. Ya tenemos nuestro salmorejo de mango, lo podemos acompañar con unos taquitos de jamón y huevo cocido picado o con unos dados de mango, eso al gusto. Mi consejo, a la hora de servir, regar con un hilito de aceite de oliva virgen. Espero que os guste!!!
