- Cortar el calabacín e ir colocándolo en filas sobre el queso, pisándose unas con otras, la primera fila y la última.
- Después lavamos y descorazonamos el tomate, y lo cortamos en rodajas y la cebolla y se coloca al lado de los calabacines, la cebolla abajo y el tomate encima.
- Por último, pelamos la berenjena, y cortamos también en rodajitas y colocamos en la parte central. Echamos a las verduras un poco de sal y pimienta, repartimos los piñones por encima, y una cucharada de aceite. Si quieres puedes echarle otras hierbas aromáticas, que tengas y te guste.

- La forma de colocar la verdura es opcional, puedes colocarla a tu gusto y repetir las que quieras, como hice yo en este caso, que solo puse una de tomate y sin cebolla.
- No peles todas las verduras, pésala y corta la que necesites según colocas en la masa.
- Pincelar los bordes con huevo batido (Optativo) yo no lo hice.
- Hornear a 200ºC con calor arriba y abajo en la mitad del horno durante 20 minutos.

- Si te sobra verdura, guárdala en el frigorífico o córtalas en dados, y la congelas, te viene muy bien para un refrito o revuelto.
