  1. Lo primero que debemos hacer es el caldo. Para ello coceremos la morralla o echaremos el caldo concentrado (425 gr.) y tres partes de líquido (dos serán de agua y la tercera de vino). Pondremos el pimiento rojo también, la cúrcuma y lo dejaremos hervir todo unos 30 minutos.
  2. Mientras se está haciendo el caldo hacemos un sofrito para después hacer un majado. Sofreímos las ñoras y las sacamos, después los ajos enteros sin pelar y los sacamos también. Finalmente, el tomate con piel cortado en 4 trozos.
  3. En un mortero con sal majamos el sofrito anterior y se lo añadimos al caldo que se está cociendo.
  4. Cuando han pasado los 30 minutos, sacamos el caldo necesario para hacer el arroz (400 ml.) y reservamos.
  5. En el caldo restante cocemos las patatas cortadas a rodajas grandes. unos 20 minutos.
  6. Añadimos el pescado y se sigue cociendo otros 15 minutos hasta que las patatas estén tiernas.
  7. Finalmente, el caldo reservado lo ponemos en la paellera, le echamos el arroz y lo dejamos cocer 13 minutos.
  8. Comemos primero el caldo con patatas y pescado al que podemos echar alioli, y después el arroz seco sin tropezones.
