  1. 150 gr. Arroz Grano Redondo
  2. 2 Longanizas Frescas
  3. 3 Cebollas Secas Medianas
  4. 75 gr. Queso Parmesano
  5. 600 ml. Caldo Pollo o Verduras 👈🏻
  6. 1 dl. Vino Blanco
  7. 20 Avellanas
  8. 70 gr. Mantequilla
  9. 1 cda Aceite de Oliva
  10. Sal y Pimienta

Steps to make to make Risotto con salchichas y avellanas

  1. Tuesta en una Sartén a fuego Lento unas Avellanas hasta que doren (unos 5 minutos) y resérvalas.
  2. Corta las Longanizas o Salchichas en trozos más pequeños y fríelas con unas gotas de Aceite; reserva para más tarde en un plato aparte para añadir al final.
  3. Pela y corta las Cebollas ; 1/2 Cebolla en Brunoise (muy picadita) y el resto en Juliana Fina.
  4. En la Sartén donde cocinaste las Longanizas echa Aceite de Oliva y la juliana de Cebolla, agrega unos granos de Sal y pocha la Cebolla a fuego suave durante 20 minutos más o menos removiendo de vez en cuando; el punto que buscamos es una Cebolla que tiene color rubio y está bien blandita (Caramelizada). Reservar
  5. En una Cazuela o Cazo echa la Mantequilla y la Cebolla picada, agrega un pellizco de Sal y Pocha hasta que se ablande unos 5 minutos
  6. Añade el Arroz y sofríelo hasta que esté transparente el grano, sin que llegue acoger color.
  7. Echa el Vino Blanco y reduce a la mitad para eliminar el Alcohol
  8. Ahora ve añadiendo Caldo poco a poco y removiendo sin prisa pero sin pausa; hasta que el Arroz está bien cocinados (unos 15 minutos), y suelte el Almidón en el Caldo; quedará cremoso y a la vez granoso y en su punto.
  9. Una vez apartado del fuego, añade abundante Queso Parmesano rallado, la Mantequilla y la Cebolla Caramelizada que teníamos reservada; Remueve hasta que se integre todo, el aspecto ha de ser muy cremoso y bien ligado
  10. Mezcla con parte de las Salchichas y sirve bien caliente con más Longanizas por encima.
  11. Espolvorea o Salpica con las Avellanas Tostadas por encima (algunas troceadas) y a disfrutar!
