- Picamos bien pequeño el puerro, la cebolla y el ajo y rehogamos en una sartén con aceite. Sazonamos.
- Añadimos el arroz y con este, el vino. Mezclamos y cocinamos todo a fuego bajo hasta que se consuma el vino.
Ahora añadimos dos cazos del agua de cocción y removemos. Cuando el arroz lo absorba, añadimos otro cazo de caldo y removemos hasta que se consuma.
A mitad de cocción del arroz agregamos el puré de remolacha y mezclamos. Seguimos echando cazo a cazo el caldo de verduras. - Una vez el arroz está cocinado lo apartamos del fuego y echamos la mantequilla, mezclamos y agregamos el queso.
